A semi-loose definition of fundie is a person who insists on believing in his own version of reality (which is generally based on mythology, superstition, etc.) in spite of evidence to the contrary.
This CAN be similar to a conspiracy theorist, who generally accepts only his version of reality and rejects evidence to the contrary, but a conspiracy theorist isn't basing his beliefs on mythology and superstition - generally it's rooted in extreme distrust of government and authority, or (in some cases) mental illness.
Like I say, it's a loose definiton. But in many cases it works - nearly every fundamentalist Christian I've ever come across, for example, rejects the facts and evidence behind evolution and believes in an ancient, mythological creation story; most fundamentalists I've encountered are superstitious in regards to things like: Satan's physical influence on people; God's direct interference in natural disasters or their personal lives; belief in and worship of a God who delights in blood sacrifice rituals; etc.
