Why would you expect a rock to "change" into something other than a rock of some description? Creatures, or at least their species, on the other hand, will eventually change into something else.

Show the dividing line between "micro" and "macro" evolution, explain what stops one from becoming the other and show the mechanism that prevents it. Go ahead, put that "creation science" to work for you.

Humans have one chromosome less than other apes. It's thought, and all the evidence suggests, that two of our chromosomes fused at their telomeres which produced human chromosome 2. We're not, therefor, "missing" any chromosomes. The fact that they're fused where they are was predicted, using evolution, long before we could actually determine if it was true. Once technology caught up and we could look at it, what do you know, we found just what we predicted.
As for the strength issue, when was the last time you had to live like they do? Not only that, it's a trade off: you either have large musculature or a large brain; you don't get both. The amount of energy taken to power our brains had to come from somewhere and evolution reduced our muscle mass to compensate for an increased intelligence.
