"Why are people atheists?"
Because I find the whole concept to be ridiculous and without evidence; n.b. I might accept something, however ridiculous, if there is sufficiently compelling evidence to do so (i.e. quantum theory). Extraordinary claims require extraordinary evidence, most religions don't even have ordinary evidence.
Viewed pragmatically, I have more empirical evidence for Santa Claus or the Tooth Fairy than for God. Someone ate those mince pies and left those presents, someone took my baby teeth and left those coins, but no-one ever answered my prayers as a child.
"What do you actually believe in and in what way?"
I believe in an objective reality that is amenable to study and that behaves in a consistent and predictable manner. I believe that the best way to understand this reality is to through the detailed and accurate observation of it. I believe that ideas and explanations as to the cause or pattern of those observations should be open to both criticism and empirical testing. I believe that things that fail such testing should be (broadly) considered false.

No.
"Why do some not even like to touch the bible?"
I don't know, I own several bibles and have no qualms about touching them. Perhaps some people are less than comfortable with the uses the bible has been put to by, and excuses it has furnished for, its 'adherents' down the years?
I appreciate you wanting to know, but I find your lack of imagination as incomprehensible as you apparently find my lack of belief.
To paraphrase Stephen Roberts; you reject the notion of all gods except one, I reject those same gods plus one.
