Defense is good, but once your Defense gets up to 540 it's more efficient to stack Dodge Rating (if you're looking for pure avoidance) or Block Rating (if you're looking for mitigation) than it is to stack more Defense.
Personally, I'd stop focusing on avoidance stats once I hit the magic Uncrittable threshold at 540 Defense, and just start piling on the Stamina. Too much avoidance and mitigation can leave you Rage-starved!
