Well, if the Bible is not 100% accurate, how can we believe any of it?
You can't. You can confirm or refute any testable claims but that's it, anything nontestable cannot be proven as accurate. Although just because something isn't 100% accurate doesn't mean that every claim is by default inaccurate, it just means that suspect claims should be tested where possible and summarily confirmed or refuted.
How do we know what is accurate or not
We know that it isn't. The bible makes several contradictory claims that cannot be reconciled, it also makes many assertions that are easily proven to be false by a simple cursory glance (i.e. 4 legged insects, talking snakes, bats are fowl, etc.). It's not a question of whether or not the bible is accurate, it is not accurate and it's inaccuracy can be proven.
I believe in Adam and Eve, and we were created from dust.
You are welcome to believe whatever you want, but that doesn't mean that you or your belief are right, it's just means that you are willing to disregard fact in favor of dogma.
It was humans who wrote it
So you admit the claims of divine origin are false?
so there is bound to be misprints
There are far more than just misprints. There are irreconcilable contradictions, false assertions, and in some cases even outright forgeries.
but it makes sense
What "makes sense"? Certainly not the biblical narrative. The fact that the bible is wildly inaccurate and cannot be used as an authority on matters of historical accuracy "makes sense", but that's about it.
