"Many scientists, such as the ones in this study, ignore the destructive genetic changes that lie behind flower color variation"
You also appear to be ignoring it as I see no explanation of what these "destructive genetics" are, how they work or why they're "destructive" simply because they alter the color of the plant's flower.
"and instead focus on how the resulting shades of color are acted upon by various types of pollinators,"
Without actually looking I'd suspect that they focused on that for a couple of reasons. One, that's probably what the study was about: how flower coloration affects pollination. And two: there are no "destructive genetic changes" to look at so obviously they were ignored.
"presupposing that the flowers are somehow changing to match the available birds and insects."
Bzzzzzzzzzt!
Wrong.
Nobody "presupposes" (other than maybe Supersport) that a plant is consciously or unconsciously changing to "match the available birds and insects".
The plant is not attempting to "match" anything. If it happens to develop a flower color that is more appealing to birds or insects then great. If not, too bad. It's a little thing called evolution. Specifically, natural selection.
"But while the diverse pollinators may serve to propagate different flowers of certain colors, they induce no new structures."
So?
"They actually show off the resiliency built into creation by the Creator, who made flying creatures with just the right kinds of mouth parts to pollinate these plants,"
Pollination, to my knowledge, has fuck all to do with mouth parts.
It's a shame that your "creator" never saw fit to give you people any sort of brain.
"as well as enough flexibility in their visual systems to still be able to recognize mutant, degenerate flower colors."
If anything it is the plant that is taking advantage of the visual spectrum of the insects and birds. Not your "creator" that you have no evidence of.
