Wrong. Evolution can and has been directly observed in a laboratory setting. Human evolution cannot be directly observed because the time spans involved are greater than a single human lifetime, but genetic and fossil evidence of past hominid evolution can be observed. Also, not seeing something doesn't mean that it's a religion.

No, not "always". Take crystalline structures for example they are naturally formed highly ordered structures that are not the result of intelligent intervention. That in and of itself blows your entire premise right out of the running.

People don't accept evolutionary theory because they "want" to, they accept it because the evidence overwhelmingly points in that direction.
