Perhaps they dislike having to go to specialty stores for meat? Actually, it isn't even them. Shops don't sell things just because of political correctness. It has to turn a profit. The owners/higher-ups honestly want to sell halal meats to whoever will buy them. If it works, then it's their business.
It's like complaining that somewhere sells fatty German sausages when you hate fat. You're not buying it, so you shouldn't care. "They have a perfect right to have their religion" isn't sounding very sincere.

Tell you what. When you're ready to put on your big girl panties and realize that you're not being persecuted, that orthodox Muslims need halal meats just like orthodox Jews need Kosher ones, and that in order to get business, these markets need to advertise the fact that they're selling halal fodods to get the Muslim business they're after, then you can come out and join the real world. We have several Middle Eastern/Halal food shops here in Kansas City too, including one at City Market that has a spice display similar to one you see in pictures of markets in that region. You walk past it and the aroma is heavenly. Oh, and the cuisine from that region is delicious and healthy.
Lighten up, open your mind, and quit playing the victim game. Yes, believe it or not, there are muslims in the world who just want to live their lives, and destroy everything and everyone in their path.
