And doesn't Ragnarok itself come about from the very prejudice the other gods rubbed in the face of Loki the half-breed, whose children likewise become more powerful than the strongest of the Asgardians with their 'impure' blood, resulting in him turning around and curb stomping the rest of the gods?

Also, you may say that Ragnarok comes in three years, but before Ragnarok comes Fimbulvinteren, which is a winter that lasts for three consecutive years. The sun is shining and it's hot, I doubt we're in the middle of the Fimbulvinter or even close to it.
Don't tell me Ragnarok is coming when we haven't had the Fimbulvinter, it's like saying you'll have a home-baked cake ready in 10 minutes when you haven't even bought the ingredients!

I'm not very familiar with such religions but I'm pretty sure that the modern versions are reconstructions (i.e., guesswork) since we aren't really sure what the original religions entailed.

Wow... a neopagan fundie. I'm surprised that we don't get more of those on here, considering that some New Agers and neopagans are just as batshit insane as fundie Christians and Muslims. So I guess even a completely non-Abrahamic religion has followers who look forward to the end of the world (even more stupid because in the Norse version of eschatology, every living thing will DIE (except for one man, one woman, and one god, none of whom are Ailric.) Actually, when Christianity began to push out "pagan" religions like the old Norse myths, they retconned their theology to mean that the old world and gods were destroyed in Ragnarok, and replaced by a new one, in which the whole Jesus myth took place, i.e. this one. So, technically the "Viking Rapture" already happened.
No, it's "Ásatrú". It might differ, depending on the language (Scandinavian languages tend to put their own spin on words common to all of them, which is quite confusing at times), but most spell it that way.
