So would care to define just exactly what a "kind" is, because so far I've gotten a different definition from every creationist I've asked.

Well you've answered my question... You don't have a fucking clue what a genome is. It's a genetic mapping sequence, nothing more. A genome is not a living organism and as such terms like mortal and immortal not only do not, but indeed cannot, apply to them.
