Because the White House, in good taste, refused to release the photos. And even if they had, idiots like you would just say they were photoshopped.

As a marine biology major I have to say this. The sharks more than likely did not eat Osama's carcass, he most likely sank to the bottom and a few hundred crabs and or lobsters made a feast of him.
As for the actual quote, Osama was buried at sea because for all the human rights abuses we have partaken in, it's still the right thing to give someone a proper burial, and that's why his head isn't on a pike in the Smithsonian. Though I have a feeling you'd still say it was a body double cooked up by the CIA or something.

Well, considering he was shot in the head, I don't think the pictures would be too pleasant to look at. Plus, like Doubting Thomas said, the conspiracy theorists would just say they were photoshopped anyway.
